Healthy Fruit Oat Muffins

These healthy fruit oat muffins are a huge hit in the Escaros household! We’ve been focusing on eating more healthy and balanced meals, including finding delicious snacks that are good for us and these muffins have fit that description perfectly! I usually make these with bananas and/or strawberries but it would be easy to substitute other fruit choices as well.

  • 2 bananas, smashed OR 1 cup sliced strawberries (any fruit of your choice can be used)
  • Nuts, chopped (optional)
  • 1 egg
  • 2T honey
  • 1t baking powder
  • 1t cinnamon
  • 1/2t nutmeg
  • 1t vanilla
  • 1/2 cup Greek yogurt
  • 1 1/2 cup oats
  • 1 cup milk

Mix together and top with additional berries or nuts, optional. Bake at 350 degrees F for 30 minutes. Enjoy!
